Ingredients
  

  • 120g oats (blended into oat flour)
  • 60g vanilla whey protein powder
  • 30g granulated sweetener (erythritol or preferred sweetener)
  • ½ teaspoon baking powder
  • ¼ teaspoon baking soda
  • Pinch of salt
  • 2 ripe bananas
  • ½ Juice of lemon
  • 1 large egg
  • 100g egg whites
  • 100g Skyr yogurt (or nonfat Greek yogurt)
  • 100ml milk (skim or low-fat)

Method
 

  1. Prepare the Oat Flour

    Blend the oats until they become a fine flour. This takes about one minute.
    Transfer the oat flour to a large mixing bowl.
  2. Mix the Dry Ingredients

    Add to the bowl:
    Whisk everything together until evenly combined.

  3. Mash the Bananas

    In a separate bowl, add the ripe bananas and squeeze in the juice from half a lemon.
    Mash thoroughly with a fork until smooth.
  4. Add the Wet Ingredients

    Into the mashed bananas, add:
    Whisk until smooth and creamy.

  5. Combine Everything

    Pour the wet mixture into the bowl of dry ingredients.
    Whisk just until no dry flour remains. Avoid overmixing.
  6. Prepare the Pan

    Line an 8 × 22 cm (3 × 9-inch) loaf pan with parchment paper.
    Pour the batter into the prepared pan and smooth the top.
  7. Bake

    Bake in a preheated oven at:
    for 35–45 minutes, or until a toothpick inserted in the center comes out clean.
    For the most accurate result, the internal temperature should reach 90–95°C (195–205°F).

  8. Cool

    Allow the banana bread to cool in the pan for about 10 minutes.
    Transfer it to a wire rack and let it cool for another 20 minutes before slicing.
