Method
Preheat the Oven
Preheat your oven to 180°C/356°F. Line a loaf tin with parchment paper, leaving a little paper over the edges to make the baked loaf easier to remove.Mash the Bananas
Place the very ripe bananas in a medium mixing bowl. Mash them with a fork until smooth or only a few small lumps remain. The riper the bananas, the more naturally sweet and flavorful your banana bread will be.Add the Wet Ingredients
Whisk the egg, yogurt, vanilla extract, and stevia or granulated sweetener into the mashed bananas. Mix until everything is well combined and smooth.Add the Dry Ingredients
Add the self-raising flour, baking powder, and ground cinnamon. Stir gently until the ingredients are combined and you have a smooth batter.Avoid overmixing, as this can make the finished banana bread less tender.Fold in the Chocolate Chips
Gently fold the 30 g of chocolate chips into the batter, distributing them evenly throughout. For an extra chocolatey finish, you can reserve a few chocolate chips to sprinkle over the top before baking.Bake
Transfer the batter to your lined loaf tin and smooth the top.Bake for 45–55 minutes, or until a knife inserted into the center comes out with very few crumbs. If the top starts browning too quickly, loosely cover it with foil for the remaining baking time.Cool and Serve
Allow the banana bread to cool in the loaf tin for about 10 minutes before carefully removing it.Slice and serve warm, then enjoy!
