Prepare the Oven and Pan
Preheat your oven to 170°C (340°F). Line an 8- or 9-inch baking pan with parchment paper. If you're using a regular pan, leave some parchment hanging over the sides so you can easily lift the cake out after baking.Make the Streusel
In a small bowl, combine the flour and brown sugar. Add the cold cubed butter and rub it into the dry ingredients using your fingertips.Continue until the mixture resembles coarse, sandy crumbs with some small buttery pieces remaining. Place the streusel in the refrigerator while you prepare the cake batter.Combine the Dry Ingredients
In a medium bowl, whisk together the all-purpose flour, baking soda, baking powder, instant coffee powder, and salt.Set the mixture aside.Prepare the Wet Ingredients
In a large bowl, whisk together the melted butter, neutral oil, white sugar, and brown sugar until well combined.Add the room-temperature eggs, mashed bananas, sour cream, and vanilla extract. Whisk until the mixture is smooth and evenly combined.Make the Batter
Add the dry ingredients to the wet mixture.Using a spatula, gently fold everything together until just combined and no visible streaks of flour remain. Be careful not to overmix the batter, as this can make the finished cake dense.Fold in the chocolate chips until evenly distributed.Add the Streusel
Pour the banana bread batter into the prepared pan and spread it into an even layer.Take the chilled streusel from the refrigerator and sprinkle it generously over the entire surface of the batter.Bake
Bake at 170°C (340°F) for approximately 30–45 minutes, depending on the size and depth of your pan.The cake is ready when the top is golden brown and a toothpick inserted into the center comes out with a few moist crumbs attached.Avoid overbaking so the banana coffee cake stays soft and moist.Cool and Serve
Allow the cake to cool in the pan for about 15 minutes. Carefully lift it out using the parchment paper and let it cool slightly before slicing.Serve warm or at room temperature with a cup of coffee or tea.
