Ingredients
  

  • 4 eggs
  • 2 cups white sugar
  • 1 cup canola oil
  • 2 bananas, mashed
  • 3 cups all-purpose flour
  • tsp baking powder
  • tsp baking soda
  • tsp ground cinnamon
  • cups shredded zucchini

Method
 

  1. Preheat oven to 350°F. Grease two 4×8-inch loaf pans and set aside.
  2. In a large bowl, mix together all ingredients until well combined.
  3. Divide batter evenly between the two prepared loaf pans.
  4. Bake for 60 minutes, or until a toothpick inserted in the center comes out clean.
  5. Cool in pans for 15 minutes, then transfer to a wire rack to cool completely before slicing.
