Ingredients
  

  • 3-4 Ripe bananas (very spotted)
  • ½ c Butter, melted (1 stick)
  • 2 Large eggs
  • ¼ c Milk — any variety
  • ½ tsp Baking soda
  • 1 tsp Cinnamon powder
  • 1¾ c All-purpose or baking flour
  • 1 c Sugar — brown or white
  • 1 tbsp Vanilla essence
  • ½ tsp Salt
  • 2–3 tsp Baking powder

Method
 

  1. Preheat your oven
    Set your oven to 350°F (175°C). Grease a standard 9×5-inch loaf pan or line it with parchment paper. Let the oven fully preheat before the batter goes in.
  2. Mash the bananas
    Peel the ripe bananas and mash them thoroughly in a large mixing bowl using a fork or potato masher. The more overripe the bananas, the sweeter and more flavorful your bread will be. Aim for a mostly smooth, slightly chunky texture.
  3. Mix the wet ingredients
    Add the melted butter to the mashed bananas and stir to combine. Then mix in the sugar, eggs, vanilla essence, and milk. Stir until everything is well incorporated.
  4. Add the dry ingredients
    Sprinkle in the salt, baking soda, baking powder, and cinnamon. Stir gently. Then fold in the flour gradually until just combined — do not overmix or the bread will become tough and dense. A few small lumps are perfectly fine.
  5. Pour and smooth
    Transfer the batter into your prepared loaf pan and smooth the top with a spatula. Tap the pan gently on the counter to release any air pockets.
  6. Bake to perfection
    Place in the center rack of your preheated oven. Bake for approximately 50 minutes, or until a toothpick inserted into the center comes out clean. If the top browns too quickly, tent loosely with foil during the last 10 minutes.
  7. Cool before slicing
    Remove from the oven and let the loaf cool in the pan for 10 minutes, then transfer to a wire rack. Allow to cool for at least 20–30 minutes before slicing. This lets the crumb set so it doesn't collapse when cut.
