Ingredients
  

  • 1½ cups All-purpose flour
  • ¾ cup Sugar
  • 1 tsp Baking powder
  • ½ tsp Baking soda
  • ¼ tsp Salt
  • ½ cup Evaporated milk
  • ¼ cup Unsalted butter, melted
  • 1 tsp Vanilla extract
  • 1 whole Egg, room temperature
  • ¾ cup Mashed ripe banana

Method
 

  1. Preheat and Prepare Your Pan

    Preheat your oven to 350°F (175°C). Grease your mini loaf pan with butter or non-stick spray, or line each cavity with parchment paper for easy removal.
  2. Mix the Dry Ingredients

    In a large mixing bowl, whisk together:
    All-purpose flour
    Sugar
    Baking powder
    Baking soda
    Salt
  3. Mix the Wet Ingredients

    In a separate bowl, combine:
    Mashed ripe bananas
    Melted unsalted butter
    Evaporated milk
    Egg (at room temperature)
    Vanilla extract
  4. Combine Wet and Dry

    Pour the wet ingredients into the dry ingredients. Gently fold together with a spatula until just combined — do not overmix, or the bread can turn dense and tough.
  5. Fill the Pan and Add Toppings

    Divide the batter evenly among the 8 mini loaf cavities, filling each about ¾ full. Sprinkle your desired toppings generously on top of each loaf.
  6. Bake

    Bake at 350°F for 20–25 minutes, or until a toothpick inserted into the center comes out clean. Mini loaves bake faster than a full-sized loaf, so start checking around the 20-minute mark.
  7. Cool and Serve

    Let the loaves cool in the pan for 5–10 minutes before transferring to a wire rack. Serve warm or at room temperature.
