Healthy Pumpkin Banana Bread

Ingredients
  

  • ¾ cup all-purpose flour
  • ¾ cup whole wheat flour
  • 2 teaspoons baking powder
  • 1 ½ teaspoons ground cinnamon
  • ½ teaspoon salt
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground ginger
  • ¼ teaspoon ground cloves
  • teaspoon uncut stevia
  • 1 medium over-ripe banana
  • 1 cup pumpkin puree
  • ¼ cup nonfat Greek yogurt
  • 2 large eggs
  • 2 teaspoons pure vanilla extract
  • ½ cup pure maple syrup
  • cup coconut oil (or melted unsalted butter)

Method
 

  1. Preheat the Oven

    Preheat your oven to 375°F (190°C). Prepare an 8 × 4-inch loaf pan by greasing it lightly with oil or nonstick cooking spray.
  2. Mix the Dry Ingredients

    In a medium mixing bowl, add the following:
    all-purpose flour
    whole wheat flour
    baking powder
    ground cinnamon
    salt
    nutmeg
    ginger
    cloves
    stevia
    Whisk the ingredients together until well combined, then set the bowl aside.

  3. Mash the Banana

    Peel the ripe banana and place it in a large mixing bowl. Using a fork, mash it thoroughly until smooth with very few lumps.
  4. Add the Wet Ingredients

    To the mashed banana, add:

    Whisk everything together until the mixture becomes smooth and well combined.
  5. Add the Coconut Oil

    Melt the coconut oil in the microwave and allow it to cool slightly. Pour it into the wet mixture and whisk again until fully incorporated.
  6. Combine Wet and Dry Ingredients

    Gradually pour the dry ingredients into the wet mixture. Use a spatula to gently fold everything together.
    Mix only until the flour is just incorporated. Avoid overmixing, as this can make the bread dense. A slightly lumpy batter is perfectly fine.
  7. Prepare the Pan

    Transfer the batter into the greased loaf pan. Use a spoon or spatula to spread the batter evenly.
  8. Bake the Bread

    Bake the bread for 40–45 minutes. Insert a toothpick or knife into the center of the loaf. If it comes out clean, the bread is ready.
  9. Cool and Serve

    Allow the bread to cool slightly in the pan before removing it. Slice and enjoy warm or at room temperature.
