Ingredients
  

  • 3 ripe bananas, mashed
  • 2 large eggs
  • ¼ cup maple syrup or honey
  • 1 teaspoon vanilla extract
  • ½ cup milk
  • 2 cups rolled oats
  • 2 teaspoons baking powder
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 teaspoon cinnamon, optional
  • ¼ cup chocolate chips, optional

Method
 

  1. Prepare the oven and pan

    Preheat your oven to 350°F (175°C). Grease a 9-inch or 8-inch loaf pan with a little oil or butter, or line it with parchment paper for easier removal.
  2. Mix the wet ingredients

    Add the ripe bananas to a large mixing bowl and mash them with a fork or potato masher until mostly smooth.
    Add the eggs, maple syrup or honey, vanilla extract, and milk. Whisk or stir until everything is well combined.
  3. Make the oat flour

    Place the rolled oats in a blender or food processor. Blend until they become a fine, flour-like consistency.
    If you're using chocolate chips, stir them into the oat flour.
  4. Combine everything

    Add the blended oat flour, baking powder, baking soda, salt, and cinnamon to the banana mixture.
    Stir gently until the dry ingredients are fully incorporated. Avoid overmixing, as this can make the finished bread less tender.
  5. Fill the loaf pan

    Pour the batter into your prepared loaf pan and spread the top evenly.
    For a pretty finish, sprinkle a few extra rolled oats and chocolate chips over the top.
  6. Bake

    Place the loaf in the preheated oven and bake for approximately 40–44 minutes.
    Check the center by inserting a toothpick. If it comes out clean or with just a few moist crumbs, the banana bread is ready.
  7. Cool and slice

    Let the bread cool in the pan for several minutes before transferring it to a cooling rack.
    Allow it to cool completely before slicing. This gives the loaf time to set and makes it easier to cut into neat slices.
