Ingredients
  

  • 3 medium ripe bananas (about 300 g)
  • 1 tablespoon fresh lemon juice
  • 3/4 cup (180 g) natural peanut butter (just peanuts and salt)
  • 2 medium eggs
  • 1/4 cup (75 g) pure maple syrup
  • 2 teaspoons vanilla extract
  • 1/2 tablespoon milk of choice (oat milk works great)
  • 1 1/2 cups (150 g) oat flour (do not pack)
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/3 cup mini chocolate chips (or raisins, nuts, or seeds)

Method
 

  1. Prepare the Oven

    Preheat your oven to 350°F (180°C). Line a 9 x 5 inch loaf pan with parchment paper to prevent sticking and make removal easier.
  2. Mash the Bananas

    In a large mixing bowl, mash the ripe bananas until smooth. Stir in the fresh lemon juice to enhance the flavor and help preserve the color.
  3. Mix the Wet Ingredients

    Add the eggs, peanut butter, maple syrup, vanilla extract, and milk to the mashed bananas. Mix everything together until smooth and well combined.
  4. Combine the Dry Ingredients

    In another bowl, whisk together the oat flour, baking powder, cinnamon, and salt until evenly mixed.
  5. Make the Batter

    Add the dry ingredients to the wet mixture. Stir gently until everything is just combined. Avoid overmixing, as this can make the bread dense.
  6. Add Chocolate Chips

    Fold in the mini chocolate chips, nuts, or raisins if desired. This step adds texture and extra sweetness to the bread.
  7. Bake the Banana Bread

    Pour the batter into the prepared loaf pan and spread it evenly. Bake for 50 to 60 minutes, or until a toothpick inserted in the center comes out clean or with only a few crumbs.
  8. Cool the Bread

    Allow the banana bread to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely before slicing.
