Ingredients
  

  • 1 ¾ cup whole wheat flour
  • 1 teaspoon cinnamon
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1/3 cup olive oil or any neutral oil
  • 2 eggs
  • 1/2 cup maple syrup
  • 1/4 cup almond milk or any milk
  • 1 cup mashed ripe bananas
  • 1 teaspoon vanilla extract

Method
 

  1. Start by preheating your oven to 350°F and preparing a muffin pan with butter or non-stick cooking spray. This ensures the muffins release easily once baked.
  2. In a large bowl, add the whole wheat flour, cinnamon, baking soda, and salt. Whisk these dry ingredients together until they are evenly combined.
  3. Next, add the olive oil, eggs, maple syrup, almond milk, mashed bananas, and vanilla extract to the same bowl. Stir the mixture until everything is well incorporated and a smooth batter forms.
  4. Spoon the batter into the prepared muffin tin, filling each muffin cup about two-thirds of the way full. This allows space for the muffins to rise during baking.
  5. Place the muffin pan in the oven and bake for 15 to 20 minutes. Begin checking at the 15-minute mark. Insert a toothpick into the center of a muffin. If it comes out almost clean, the muffins are ready.
  6. Allow the muffins to cool for a few minutes before removing them from the pan.
