Ingredients
  

  • 2 (about 240 g) Ripe bananas
  • 2 Eggs
  • 220 g (¾ cup + 2 tbsp) Greek yogurt (0% fat)
  • 40 g (2 tbsp) Honey (optional)
  • 220 g (2½ cups) Quick oats
  • 12 g (3 tsp) Baking powder
  • 6 g (2 tsp) Ground cinnamon
  • 70 g (2.5 oz) Dark chocolate, chopped

Method
 

  1. Prepare the Bananas

    Mash the ripe bananas thoroughly in a large mixing bowl until completely smooth.
  2. Mix the Wet Ingredients

    Add the eggs, Greek yogurt, and honey (if using). Whisk until smooth and fully combined.
  3. Make Oat Flour

    Place the quick oats into a food processor and blend until they become a fine flour.
  4. Combine Everything

    Gradually mix the oat flour into the wet ingredients in two or three additions.
    Add the cinnamon and sift in the baking powder. Stir until a smooth batter forms.
  5. Add Chocolate

    Fold about three-quarters of the chopped dark chocolate into the batter.
  6. Fill the Pan

    Pour the batter into a greased and parchment-lined 1 kg (2 lb) loaf pan.
    Use a buttered knife to score a shallow line down the centre of the batter. This helps the loaf rise evenly.
    Top with the remaining chocolate chunks and sprinkle with a few rolled oats.
  7. Bake

    Bake on the bottom rack of a preheated oven at 180°C (350°F) for approximately 40 minutes, or until:
    The top is golden brown
    A toothpick inserted into the centre comes out clean
    The loaf springs back lightly when touched
  8. Cool

    Allow the banana bread to cool completely in the pan before slicing. This helps the loaf set properly and makes cleaner slices.
