Ingredients
  

  • 2 eggs
  • ½ cup olive oil
  • ½ cup maple syrup
  • ½ cup milk (oat milk works great)
  • 1 cup ripe bananas mashed (about 2 to 3 bananas)
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt
  • ½ teaspoon cinnamon
  • 1 ¾ cups whole wheat flour
  • ¾ cup dark chocolate chips (divided)

Method
 

  1. Preheat the oven
    Preheat your oven to 350°F (175°C). Grease a 9 × 5 inch loaf pan and set it aside.
  2. Mix the wet ingredients
    In a large mixing bowl, beat the eggs. Add the olive oil, maple syrup, oat milk, and vanilla extract. Mix until the ingredients are well combined.
    Add the mashed bananas and stir until the mixture becomes smooth.
  3. Add the dry ingredients
    Add the whole wheat flour, cinnamon, baking soda, and salt to the bowl. Stir everything together until the batter is evenly combined.
    Fold in ½ cup of the dark chocolate chips.
  4. Prepare the loaf
    Pour the batter into the prepared loaf pan. Sprinkle the remaining chocolate chips evenly on top.
  5. Bake
    Bake the banana bread for about 50 minutes, or until a toothpick inserted into the center comes out clean.
  6. Cool and slice
    Let the banana bread cool in the pan for 10 minutes before transferring it to a rack. Slice and enjoy!
