Ingredients
  

  • 5 Ripe bananas
  • 2 Eggs
  • 1 box (approx. 432g / 15.25 oz) Yellow cake mix (box)

Method
 

  1. Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan and set aside.
  2. Mash the bananas in a large mixing bowl until smooth with very few lumps. The riper the bananas, the easier they are to mash.
  3. Add the eggs to the mashed bananas and mix well until fully combined.
  4. Pour in the cake mix and stir until a thick, even batter forms. Don't overmix — a few lumps are fine.
  5. Pour the batter into the prepared loaf pan and spread it evenly.
  6. Bake for 45–55 minutes, or until a toothpick inserted into the center comes out clean.
  7. Cool for 10 minutes in the pan, then transfer to a wire rack. Let cool completely before slicing for the best texture.
