Ingredients
  

  • ¾ cup rolled oats
  • 1 large whole egg
  • 1 large egg white
  • 2 ripe bananas
  • 1 teaspoon vanilla extract
  • ¼ cup unsweetened applesauce
  • 1 teaspoon ground cinnamon
  • cups cottage cheese
  • 2 scoops protein powder
  • ¾ teaspoon baking soda
  • 1 pinch salt

Method
 

  1. Preheat your oven to 350°F (176°C).
  2. Add all ingredients into a large bowl, food processor, or blender.
  3. Blend or mix until smooth. Avoid overmixing once everything is combined.
  4. Pour the batter into a lined or greased loaf pan.
  5. Fold in or sprinkle chocolate chips, walnuts, pecans, or other mix-ins if desired.
  6. Bake for 40–45 minutes or until a toothpick inserted into the center comes out mostly clean.
  7. Allow the banana bread to cool before slicing and serving.
