Ingredients
  

  • ½ cup unsalted butter (115g)
  • 3 ripe bananas (about 1 cup), mashed
  • ½ cup brown sugar (100g)
  • ¼ cup white sugar (50g)
  • 1 large egg
  • 1 teaspoon vanilla extract (5ml)
  • ½ teaspoon salt (3g)
  • cups all-purpose flour (190g)
  • 1 teaspoon baking soda (4g)
  • ½ cup dark chocolate chips, plus extra for topping

Method
 

  1. Brown the butter: Cook butter over medium heat for about 5 minutes until golden and nutty. Let cool slightly.
  2. Mix wet ingredients: Mash bananas, then stir in sugars, egg, vanilla, salt, and cooled brown butter.
  3. Add dry ingredients: Fold in flour, baking soda, and chocolate chips. Don’t overmix.
  4. Prepare: Pour into a greased and parchment-lined 9×5-inch loaf pan. Sprinkle extra chocolate chips on top.
  5. Bake: Bake at 170°C (340°F) for 50–60 minutes, or until a toothpick comes out clean.
