Ingredients
  

  • 1¼ cups all-purpose flour
  • ½ teaspoon kosher salt
  • ½ teaspoon baking powder
  • ¼ teaspoon baking soda
  • 1 large ripe banana
  • 1 large egg
  • ⅓ cup white sugar
  • ¼ cup milk
  • ¼ teaspoon vanilla extract
  • ¼ cup unsalted butter, melted
  • ½ cup finely chopped walnuts
  • 1 tablespoon unsalted butter, or as needed, for cooking

Method
 

  1. Mix the Dry Ingredients

    In a small bowl, whisk together the flour, kosher salt, baking powder, and baking soda until evenly combined. Set aside.
  2. Mash the Banana

    Place the ripe banana in a large mixing bowl and mash it into a smooth paste using a potato masher or fork.
  3. Make the Batter

    Add the egg and sugar to the mashed banana. Whisk for about 2 minutes until the mixture becomes smooth, creamy, and the sugar has mostly dissolved.
    Stir in the milk, vanilla extract, melted butter, and chopped walnuts.
    Gradually add the dry ingredients, whisking gently until everything is just combined. Avoid overmixing to keep the pancakes light and fluffy.
  4. Rest the Batter

    Allow the batter to rest for 10 minutes. This helps hydrate the flour and creates softer pancakes.
  5. Cook the Pancakes

    Heat a large nonstick skillet or griddle over medium-high heat. Melt about 1 tablespoon of butter in the pan.
    Pour approximately ⅓ cup batter for each pancake.
    Reduce the heat to medium and cook for about 3 minutes, or until the edges begin to dry and bubbles appear on the surface.
    Carefully flip each pancake and cook for another 3 minutes, until both sides are golden brown and the center is fully cooked.
    Serve immediately while warm.
